- 225 g soften unsalted butter
- 225 g sugar
- 4 medium eggs
- 1 teaspoon vanilla extract
- 60 ml milk
Preheat the oven to 375°F / 190°C / Gas Mark 5
Sieve the self-rising flour and baking powder and keep to the side.
In a separate bowl mix the butter and sugar together until light and fluffy. Start by using a fork and then a hand whisk. For best results use an electric hand mixer.
Add the eggs to the butter and sugar. Add one egg and a time, mix well before adding the next egg.
Add the milk and vanilla extract and mix. Now using a spatula gently fold in the self-rising flour and baking powder from earlier until everything has mixed well together.
